Food for today

Two Oat bran cookies

Chicken leg and thigh dipped in Coconut syrup (sugar-free)

Skim milk 1 1/4 cup pineapple and Coconut SF syrup

1 cup of roasted veggies with olive oil and herbs

1 cup of Fat Free Greek Yogurt

Some of us have medical issues.  If you are older or have medical issues before you start the diet, talk to your Dr about it.  It is a high protein, low fat, low carb diet.  This diet is not for everyone.  What your Doctor advises is the most important thing.  He may instruct you to modify the diet to better fit your health status.  Doing the coaching program would be the best way to modify the program.  Again this diet is not for everyone.  Check with your Doctor.

I have special medical needs that changed the amount of Oat Bran I have daily.  Also my health needs have changed the amount of olive oil I consume.  At the present time the pain in my back and knees remind me to stay on the diet.

I do not cheat on the diet.  The cookies help.  I last year I would spurge on yogurt with sugar-free flavorings (pineapple and coconut).  Oh I loved the frozen drinks with skim milk, dry non fat milk, bit of yogurt, SF syrups of chocolate and hazelnut and tons and tons of ice.  I have a list of favs including peach with touch almond flavoring.  I am sure you could think of some tasty ones.  My sister taught me how to make floating island this year.  Spurge on Dukan diet,  save cheating on something else.

Dukan Friendly Oat Bran Cookie Recipe

DUKAN OAT BRAN COOKIE ALABAMA

Oven 350 degrees F

Ingredients:

6 Tablespoons oat bran

2 Tablespoons sweetener  ( I use Splenda type sweetener)

1/2 to one teaspoon of cinnamon

1 to 1/2 teaspoon baking powder

2 teaspoons Greek yogurt Fat Free

2 or 3 medium egg whites

(Black strap molasses 2-4 drops  Optional)

Mix dry ingredients together.  Mix egg whites ( I froth them first) and yogurt. (I dip small fork tines into the molasses – just barely touch it.)

Combine dry and wet ingredients. If too much liquid let stand a few minutes or add one tablespoon of oat bran.

Spoon out 6 cookies (or 7 if you added more oat bran) on a cookie sheet that is  covered with silpat or foil.

Bake 350

Toaster oven  bake 15 to 20 minutes or until golden brown.

Conventional oven bake 12 to 14 minutes or golden brown.

Today is a PV Day… Protein + Veggies

Current weight:  185.4 lbs

Daily loss:    gain .4 lb

Total loss:    12 lbs

Wt to go:    31.4 lbs

Please be aware that I violate the oat bran rule to prevent the problems that caused me to drop the Dukan diet last year.

Food for the day

2 slices turkey bacon (4 g protein)

Coffee with 2 oat bran cookies  (6 g proteins  10 g carb)

Oat bran in custard   (19 g protein  15 g carb )

Slice tomato with 3 slices bacon  (6 g protein )

One boiled egg white  (4 g protein)

1 cup of cooked/wilted spinach

8 ounces Fat Free yogurt  (24 g protein)

Two cups of roasted veggies  (cauliflower, tomato, onions, mushrooms with olive oil and herbs)

One  97% fat free kosher hot dog boiled to death   (to lower sodium and fat) (6 g protein and 3 g carb)

1 oat bran cookie    (3 g protein 5 carb)

I did not figure out the net carbs.

I must have a cholesterol test tomorrow.  If it does not come out well he will insist I increase my medication.  I do believe I will have oat bran and take those extra calories to get my cholesterol down.

I will pack breakfast of 1 kosher hot dog with mustard sauce, one cup of oats in custard  and two hard-boiled eggs  and tons of water.  And if the Dr is threatening to increase my medication, I will try to keep my intake of vodka down.  Better bring cookies.

New product or new to me discovered.  It is ” true lemon ” packets.  “NO calories  No carbs”.  One packet equals 1 lemon wedge.  Oh, it is so good in Greek yogurt with splenda ( 3 packets of each).  Best treat.  It is described as “cold pressed and crystallized lemon”.  Please read the label carefully.  I plan to make frozen pops out of it.

Dukan Diet More on Diet Soda Sis’s Ginger Fish Recipe

Snack:     Yogurt, Pork and onions (leftovers)

Lunch:     Tofu fries, Bran in custard

Dinner:     Hamburger (2 ounces) with onion, Chicken tender in gingerale with onions.  Yogurt

On October 23, 2011, this blog talked about diet soda and the rules (you can drink diet soda) and recommendations (limit diet soda to one a day).  I was a bit floored since I was under the impression that Dr Dukan said was an advocate of diet soda.  Remember I went out to and bought a case of diet soda.  (I rarely drink soda.)

I went back to reread the section where he talks about diet soda, (page 34 in The Dukan Diet USA version).  Basically he states diet sodas are great “allies” when no more than one calorie per glass. He discusses diet sodas in three paragraphs.  He never gives any indications we should limit diet sodas, I suggest you read the October 23 entry of this blog and Dr Dukan’s writings on diet soda so you can decide for yourself.

Looking for different tastes on pure protein day?  My sister raves on about her fish cooked in ginger sauce.  I finally tried it and yes it is very good.  Now I can eat frozen fish.  The dish can be adapted to a fry pan.

Sis’s Ginger Fish

1 fillet of fish like tilapia

1/3 cup Diet gingerale

Freshly finely grated ginger to taste (I use ½ to 1 teaspoon)

Soy sauce small dash

Black pepper to taste

Set oven 350/185.  Grate ginger into gingerale and allow to sit for 15 minutes or so.   Place fish in baking dish that will allow the fish to be almost covering the fish somewhat.  Drain gingerale mixture, discarding the grated ginger.  Add soy sauce to gingerale and pour over fish. Add black pepper to taste.  Bake until fish is cooked, using the 12 to 15 minutes per inch rule.  Yes, it is  Pure Protein recipe.

Day 2 Attack PP to Restart Dukan Diet after Illness

I hope this is a restart. I still am very tired and sleep so much.  Over sleeping is the name of the game.  I am behind in everything.  I go to bed early and wake up late.  I do want to get some exercise in today.  Yes, it will be a little at a time.  I have been reading the book again and decided I needed two attack days to jump-start the weight loss.

Breakfast:   Crepe Recipe ( in frying pan making small  chocolate pancakes so tasty.)

Lunch:      Sliced pork tenderloin with onions.

Snack:     Two pieces of  Jennie-O bacon cooked to a crisp in the microwave.  Two glasses of milk with Sweetleaf chocolate.

(Love the sweet and salty.)

Supper:     More pork slices with onions, thyme,  grate of ginger, apple cider vinegar and NF sweetener.  So good.

Snack:       If needed, pina colada shake or yogurt.

My decision is not to fret too much about the Pure Protein days of consolidation and stabilization is very soothing.  I had some of my favorites today.  Only thing missing is Vicki’s Chocolate Eggs with NS Chocolate syrup and French toast made with Sunshine Souffle.  Even if I must have more PP days, I am not giving up chocolate.

I still can not trust what I see on the scale.  Since I still have lots of Prednisone in my system.  I have been weighing myself and seeing the range of 174.6 to 180.8 lbs.   In one week life will get back to normal.  I am recovering and that is what is important.   The alternative is the hospital where there is a 20 to 30 lb puff in your body with Massive amounts of this drug.  No staying on Dukan then.  I have been following the diet now so all is well. Just a hiccup in the road. Bump on the bridge.

I have been trying to improve my PP days.  Looking at how much dairy and its carb count.  Avoiding tolerated foods, cooking my meat to well done,  and eating before I feel starved.

I have been busy with helping my friend out with Dr appts.   There was a fire in my building today.  We missed most of the excitement and we made the news again this week.

I think this medication absorbs every drop of calorie there is.  Well, the gain was aided and abetted by extra oat bran and more veggies than I usually eat.  I am just smack under the weather.  Need to start back with walking a little more. Another burp in the hiccup of dukaning it.  I wanted to post a recipe today to celebrate October 1.  I found this on dukan US Facebook.  Makes sense and looks good. See the note on bottom for muffins.

Jelly Roll Pumpkin Cake

For the cake:
6Tbs oat bran
1Tbs corn starch
1/2tsp baking powder
1/2 c sweetener/ 4Tbs Truvia
4 eggs, separated
4Tbs yogurt
1c pumpkin puree
1Tbs pumpkin pie spice
1tsp vanilla

Preheat oven to 350 F
Mix together all dry ingredients well.
Add yogurt, yolks, pumpkin and vanilla, mixing well.
Beat egg whites to stiff peaks.
Fold whites into batter.
Bake on a parchment lined jelly roll sheet pan, about 15min, or until done.
Cool.

Filling:
2 8oz pkgs of FF cream cheese, room temp
2Tbs Truvia
Beat cream cheese and Truvia together till smooth.
Flavor as desired. I used 3T SF caramel syrup and 1t cinnamon. Next time I’ll try maple flavoring. Use whatever you like.

When cake is cool, spread cream cheese filling onto cake and roll up. Wrap well in plastic wrap and refrigerate for a couple hours.

Since this has 6Tbs of oat bran, you can eat 1/3 of the pumpkin roll for your 2Tbs daily allotment of oat bran.

I made the muffins and they were a hit! It made 12 large muffins. I added 1/2 cup FF sour ceam to the FF cream cheese, cinnamon, Stevia mixture (thinner) and turned it into frosting. I baked it at 350 for 15 mins and they were a perfect texture ( I am at 5000 ft evelevation). No one even asked it they were “diet”. I am going to use it at Thanksgiving too!! Thanx Liz!!

I have not tried this because I used all my pumpkin on two recipe that were complete failures.  This one got good reviews.  I would not use the frosting because of reports of weight gain problem with using too much NF cream cheese.

On Facebook US Dukan Diet Pages, Face book is taking down the discussion pages on October 31, 2011.  There are a number so good recipes there so copy them now.  Hopefully other recipes will have another page since anything on the wall is hard to retrieve and difficult to copy.

Duukan Diet Blues Continue, Pure Protein Faves

Sorry I have been away trying to catch by breath.  The scale is yo-yo tripping and will for the next two weeks.  I read the chapter about menopause since my med is a  hormone and figured that would help me.  I am staying on the program and not changing it.  It will work out in time.

I have been trying to figure out what are my favorites for PP days.  I like to have in the frig jello made with NF Greek yogurt.   I tried cooking microwave turkey bacon till crisp and dry and they were a good snack to carry along for a shopping trip or extra with meal.

My favorite meat is pork tenderloin (unflavored) that I get at a good price at Costco.   I cut it up and freeze it.  So easy and tasty.   (I brown it then add a shallot or some onion, simmer in ginger ale or cherry flavoring in water.  I make a double batch because it is so good cold to snack on the next day. )

My all time favorite pp supper is French toast  (see September 3,2011)  made with Sunshine souffle (see August 13th) with Canadian bacon and NS caramel syrup.   One souffle makes enough for 4 meals of french toast. Oat bran cookies are wonderful but I have gotten in the habit of having them in the morning.

I am defrosting chicken tenders to make Tandoori Chicken.  The tenders will marinate quickly and Sunbrand has a powder that you add to yogurt, lemon juice (and more yogurt to skip the oil).   Then cook under the broil.  Sounds good with a side of microwaved bacon.  I like Sun Brand. No coloring in this either.  Serve with fresh lemon.  Edited to give results.  Too too spicy.  I will go back to my recipe of marinating in lemon, mustard, and yogurt.

Since we must eat our two tablespoons of oat bran a day and everyone loves Galettes, here is a new one.   I copied this from Vicki C’s website.  I think we could make them with 1 tablspoon of  Oat bran and have them with meals.  Prefect pure protein heaven.  http://dukanblogging.blogspot.com/2011/08/day-77-cruise-chocolate-hazelnut.html   The added notes are from Vicki.

Here’s the recipe:1 egg white (I used Egg Beaters)
2 Tbsp oat bran
2 Tbsp fat-free, low-carb vanilla yogurt
2 tsp sweetener (I used Splenda)
1/2 tsp unsweetened cocoa powder
Torani sugar-free hazelnut syrup (to taste)
1) In a small bowl, beat egg. Add remaining ingredients, then mix.
2) Pour mixture into a heated nonstick pan (medium heat), and cook for 5 minutes. Flip the galette and cook for another 5 minutes.

Perhaps I had the heat on too high, but my galette actually cooked in 5 minutes total (i.e., 2.5 minutes — rather than 5 minutes — per side). Overall, I thought it tasted great — the galette was light, fluffy, and full of hazelnut goodness. Next time I might add a little more cocoa powder, but still thought it was awesome.

I’ve heard that the galettes freeze well, so if I’m not too lazy, I might make some in bulk, freeze them, and enjoy the fruits of my labor for days to come… 🙂

Dukan Diet Love Those Chocolate Cookies

Yesterday I was interrupted while posting and did not get back to finish it.  I had an invite by a friend  to a coffee and apple pie get together to say thank you to volunteers.  Her husband passed away last week so I could not say no.

I made the bran cookies to take them with me and serve them as an extra item (Lagniappe (lan’ yap) New Orleans language).

Everyone  said they liked them.

True some people were polite.  (“I would not like to eat them everyday.”)

The cinnamon cookies and chocolate cookies were made about the diameter of a quarter.   And yes,  I ate two cookies  and drank one quart of ice water.  It worked out great.   I had given my self permission to eat extra bran since two cookies  equaled  one scant teaspoon of oat bran .  I was hungry and since I am battling this lung infection I had to eat.

I do not get invited to functions or to people’s houses to eat.    Sis warned me that when you used napkins to blot sauce or oil off of food,  it gets ugly fast.  So ugly it takes everyone’s appetite away.   Yours included.
